Quick Breakfast Idea: Fluffy Ube Pancakes

Want dessert for breakfast? You have to try out these pancakes! They are so fluffy, and the color will definitely wake you up. Step up your Sunday brunch game by making these pancakes that are sure to please the whole family.



Ube is a root that is distinctly purple in color. In this recipe, we're using an artificial extract, but the flavor is still very present in the final product. Try it today with your preferred choice of toppings, either some coconut flakes like we show here, or a coconut sauce to drizzle on top!

Vegan Ube Pancakes


Batter Ingredients

  • 290g All-purpose flour

  • 100g Granulated sugar (for a sugar-free option, try monk fruit sweetener)

  • 20g Baking powder

  • 1/4 tsp Baking soda

  • 3g Salt

  • 450ml Coconut Milk + some extra in case batter thickens too much

  • 60g Vegan butter, melted

  • 70ml Unsweetened applesauce

  • 1/4 tsp Ube extract

Instructions

  1. In small bowl, melt vegan butter in microwave for 10 second intervals until melted (around 30 seconds). Set aside to cool.

  2. In large bowl, combine flour, sugar, baking powder, baking soda, and salt.

  3. In separate medium bowl, add coconut milk, vegan butter, and ube extract. Whisk well.

  4. Add applesauce to coconut milk mixture. Lightly whisk until combined.

  5. Gradually pour wet mixture into dry ingredients. Fold together until there are no more dry flour spots. Some lumps are okay. Batter should be thick, but easily pourable.

  6. Let the batter rest for 15 minutes.

  7. Preheat a nonstick pan on medium heat, then lower it to a medium low heat. Use cooking spray or vegan butter to lightly grease the pan.

  8. Make sure pan is fully heated. Use ladle to pour ¼ - ½ cup of batter onto the pan. Batter should sizzle lightly right away. Cook on one side until bubbles form on edges and in the center of the pancake surface (3 - 4 minutes).

  9. Once bubbles on the pancake surface start to pop, carefully flip the pancake. If the pancake feels too fragile to flip, leave it to cook for an additional minute. Cook the other size for 1-2 minutes.

  10. Plate and enjoy with coconut sauce and fruit.

 

Coconut Sauce

Instructions

1. Sift powdered sugar into a medium bowl.

2. Add coconut milk 1 tbsp at a time to powdered sugar. Mix well after every tablespoon.

3. Add vanilla extract to the mixture and mix well until you reach a smooth consistency.
