One thing I really miss from pre-vegan days is Korean BBQ. Luckily, we have an awesome recipe to get the texture and flavors just right.
Bulgogi Jackfruit
Ingredients
1 apple, halved and peeled
560 g young jackfruit (2 cans, drained)
120 ml soy sauce
110 ml water
60 g brown sugar
60 ml sesame oil
15 g garlic, minced
20 g ginger, minced
40 g gochujang
220 ml mirin/rice wine
2 tsp ground black pepper
15 g sesame seeds
red pepper flakes
Instructions
Place drained jackfruit on cutting board and pat dry. Remove seeds (large round pieces). Slice vertically along grain into triangular sections. Place into large bowl.
Take half apple and cut into chunks (around 1 inch wide).
Combine soy sauce, water, brown sugar, sesame oil, garlic, ginger, gochujang, and mirin. Stir well until sugar dissolves.
Pour soy sauce mixture and apple chunks onto jackfruit. Make sure jackfruit and apples are fully submerged. Cover and let marinate in the refrigerator for at least 1 hour. Then remove apples chunks.
Pour jackfruit into medium pan (include all marinade). Turn heat onto high and bring mixture to boil. Keep boiling for 10 minutes (uncovered) while stirring occasionally.
Add sesame seeds, black pepper, and red pepper flakes.
Once mixture has reduced, turn heat down and simmer for an additional 10 minutes. If mixture is still wet, continue reducing. Jackfruit should look like shredded meat.
Cook jackfruit until liquid has mostly absorbed. Remove from heat and set aside.
Pizza Assembly and Baking

100 g pizza sauce
60 g gochujang
corn
vegan mozzarella
green bell pepper
shallots, sliced
sesame seeds
black pepper
green onion, chopped
cilantro, chopped
Instructions
Preheat oven to the highest temperature. The higher the better.
Pizza sauce: In small bowl, mix pre-made pizza sauce with gochujang.
Remove covering on pizza dough. You can split dough according preference..
Coat a baking pan or cast iron griddle with a thin layer of oil. Spread dough into thin layer on pan. Take a fork and poke holes all over dough to ensure that there will be no air pockets forming below the dough.
Add toppings to pizza.
Once oven is done preheating, place pizza in oven. Bake on top rack for 10-12 minutes (or until cheese melts). Then move the baking pan to the bottom rack and bake for another 5-8 minutes. If you're baking using a cast iron, keep it on the bottom rack the entire time for 20-25 minutes. These times will vary depending on your oven. An ideal crust will be golden brown on the bottom.
Remove from oven and let it cool on pan for 10 minutes. After cooling, cut the pizza. Enjoy!
